How to cook the perfect steak…

We’re always being asked the best way to cook a great steak, so we thought we’d share our  way with you

First of all select a good cut of  meat, see here for a great guide on the different types available

For this video we used one of our 28 day aged Hereford Sirloin steaks

Firstly, bring the steak out of the fridge and let it come up to room temperature before the cooking begins, this allows the temperature  to rise so if you are cooking it on the rarer side the middle of the steak won’t be ice cold

Next put a heavy bottomed pan on the heat with a tiny amount of oil and crank up the heat until the pan is smoking

Whist this is happening, give the steak a generous seasoning with salt and pepper

Place the steak in the pan and cook for 2 minutes on each side (this gave us a perfect medium rare with our meat, cook longer each side for more well done) It’s important to cook on each side to ensure your steak is cooked evenly.

Before removing , turn the heat right down, lob in a knob of butter and baste the steak for a few minutes. Its important you turn the heat down or the butter will burn

Remove the steak and leave on the side to rest for 2-3 minutes to allow the meat to relax and become juicer and more succulent

Serve and enjoy!
