Sausage and sage pappardelle (serves 4)
This is a really quick and easy pasta recipe we had recently on our Prix Fixe menu!
A great little dish that can be prepared in no time at all!
4 Good quality pork sausages
1 Red onion , sliced
2 Cloves garlic
1 Can good quality chopped tomatoes
For the sauce finely slice the garlic and add to a hot pan.
Add the chopped tomatoes simmer, season to taste. This can be done in advance and refrigerated.
Break up the sausages and fry until browned along with the sliced onion
Add the tomato sauce
Add sauce to the browned sausages
Boil the pasta for 8-10 minutes and drain and toss into sausage ragout along with sage
Serve up with lashings of parmesan!
